It takes its name from the “apyriá,” the warm breath of the volcano that emerges through the cracks of the Nisyrian land. APYRI is the winery’s experimental wine, a bold blend of tradition and innovation. Athiri from Rhodes meets Asyrtiko from Nisyros in a brief contact with the grape skins, which adds depth and complexity. Aged for 9 months in 300-liter amphorae and stainless steel tanks. Its color is pale yellow with golden hues. Its aroma is complex and intricate, with notes of dried fruits such as apricot, roasted almond, and blond tobacco predominating, followed by salinity and pronounced minerality.
